The Windy City Watermelon Salad

You’re in Chicago, the Nutty Italian’s favorite city, and you find yourself accompanied by a lovely lady named Ella on a vintage romantic horse drawn carriage ride. It’s a perfect summer day and the coachman pulls up to a quaint bistro where you are seated outside under an ivy vine draped wrought iron canopy. The waiter, sharply tailored with a fine linen napkin over his arm, pulls out a chair for the lovely lady and when seated, hands you your brunch menus. As you look them over, you listen to today’s specials, but something on the menu attracts your attention and the daily specials quickly fade away. Why, it’s the perfect brunch salad, you think to yourself, called, “The Windy City Watermelon Salad.” Even the name sounds perfectly refreshing for a summer brunch meal and you immediately place an order for two. Ella, of course, is delighted and as the waiter departs to fetch your drinks, you both read the description together…

“A uniquely refreshing salad that will give you endless moments of happiness with generous chunks of ripe red seedless watermelon, soft creamy feta cheese, crisp cilantro, Romaine and mixed field greens, thinly sliced sweet red onion, copious amounts of fresh ground black pepper, lightly dashed with natural sea salt and sprinkled with sautéed pine nuts all delicately mixed together, drizzled with extra virgin olive oil and laced with tart red wine vinegar.”

There you have it! Like a summer breeze gently caressing the lapping waves of the lake behind you, this wonderful Chi-Town dish.
